THE PRODUCTION OF FAT* FROM SUGARS BY THE ACTION OF MOULDS. Memorandum by Professor H. Raistrick. Micro-organisms of all types, whether bacteria, yeasts or moulds, contain fat in varying amounts. The amount of fat present is usually small but is occasionally so large that abundant fat globules are easily visible under the microscope. For the purposes of this memorandum no reference will be made to the abundant literature on the true yeasts (Saccharomyces), since this aspect of the problem has already been dealt with by Professor T.
