SCIENTIFIC COMMITTEE ON FOOD POLICY. The Royal Institution, 21 Albemarle Street, W.1. 25th September, 1941. THE ADDITION OF CALCIUM SALTS TO BREAD. The Scientific Food Committee has been asked to pronounce on certain scientific issues relating to the addition of Calcium Salts to Bread. We have called into consultation Lord Horder and Professor Drummond of the Ministry of Food, and Sir Wilson Jameson and Dr. Magee of the Ministry of Health; at our joint meeting on the 24th of September 1941, the following conclusions were adopted unanimously:(1) (2) (3) (4) (5) Deficiency of calcium is dangerous to health; and the existence of such a deficiency in the past has long been a subject of grave anxiety to medical and nutritional experts.
