As 3/8ths of this total is the poor quality protein of white flour considerable benefit would be secured by replacing white flour by that of 85% extraction flour (see F.P. (M) (41) 49), whose protein is not only present in larger amount but is of higher quality. Psychological as well as physiological improvement would follow from any further provision of animal protein in the form of meat, eggs, milk or cheese. 2. NURSING WOMEN, CHILDREN AND ADOLESCENTS REQUIRE SPECIAL SUPPLIES OF PROTEIN. Nursing women, children and adolescents require more protein in proportion to their weight than ordinary adults and it is important that a large part of it should be of high quality.
