FATS: VALUE AS A SOURCE OF ENERGY AND IN METABOLISM. Memorandum by Professor E.P. Cathcart.

26 Jun 1941

As stated above fat and carbohydrate are within certain limits isodynamically replaceable in the diet. But quite apart from the faulty metabolism which would result from a total replacement is the fact that in the case of heavy workers whose intake of energy must be high it would be impossible to consume a sufficient amount of carbohydrate to cover these needs. Due to the necessary bulk of the diet there would be difficulty in the actual act o### eating and there would be difficulty in digestion and in metabolism.
