ELEVENTH REPORT: CANNING OF FRUIT AND VEGETABLES.

6. Fruit. Home grown fruit is consumed fresh, canned, or used in the manufacture of jam. Fruit canned in this country is expensive and in consequence is not eaten to any great extent by the lower income groups; canning also uses large quantities of tinplate. Jam, on the other hand, is relatively cheap, is a food of high energy value, and is consumed in large quantities by the poor. Moveover, if smear fats are in short supply it is essential that adequate stocks of jam should be available to facilitate the consumption of bread, and also for addition to starchy puddings.
