THE UTILISATION OF VEGETABLES (OTHER THAN POTATOES). Memorandum by Dr. B. S. Platt.

23 Jul 1940

No account has been taken of the members of the B group of vitamins other than B1. These are being shown to be of importance for human nutrition. They are probably present in plant sources but may not be utilisable from cereals which have merely been ground and baked. This matter is already under investigation. Another important source which should be explored is yeast; this is being manufactured in Germany as a source of protein'.; it is suspected however that yeast can contribute many food factors of value including the B group of vitamins.
