The provision of adequate supplies of protein to the population is essential for the maintenance of health, and in wealthy countries has been assured by an increased consumption of animal products. Thus although all human needs can be supplied by diets of almost exclusively vegetable origin, the great reduction in the amounts of meat, fish and eggs which events have forced on this country raise a doubt as to the adequacy of our supplies.
