TRAINING FOR CATERING AND COOKING The growing needs of the industry. 1. The great expansion in the provision of hostels, factory canteens and British Restaurants, the proposed extension of the School meals Service to provide ultimately for every school child a mid-day meal at school, and the development of the Hospitals Service, create an urgent and lasting demand for persons qualified to prepare and to supervise the preparation of meals on a large scale. In addition, if the tourist traffic to this country after the war is to be expanded, it will be necessary for an improvement to be made in the standards of service in hotels and restaurants and this can only be achieved by the provision of better-qualified staff.
